I’m looking for songs that cover all guitar techniques, like Metallica’s ‘One’ for tapping or Tornado of Souls for large stretches. I want to complete every technique by using songs that feature them, so I can become much better at playing.
There are so many different genres and playing styles out there that it’s hard to answer your question properly.
You don’t need to learn every technique ever invented, since many are genre-specific.
There’s one solo that has nearly every technique in it. It’s like an exercise for everything you’re asking about. ‘Under a Glass Moon’ by John Petrucci and Dream Theater.

But I think it’s missing thumping.
After you master the basics, just focus on the techniques that help you create the sound you enjoy the most.
Nobody’s ever learned everything. There’s always something new to discover with music.
If you want to get the flamenco strumming down, try ‘Juan Loco’ by Rodrigo Y Gabriela.
‘One’ is a great song to learn, as is ‘Fade to Black’. If you like that style, the whole 'Kill ‘em All’ album is a solid thrash primer. I personally got a lot out of ‘Master of Reality’ songs—they helped me master the pentatonic scale and still let me get creative with riffs. I’m more of a Sabbath fan. When I was really into shredding, Bach’s fugues were a big help for me.
